Red White and Blue Cheesecake Salad With Pudding

There is nothing worse than going to a holiday gathering and realizing that EVERYTHING on the table is high in points. The best solution is to take some dishes you know are delicious Weight Watchers recipes that everyone will love and that will help you stay on track during the party. This Weight Watchers red, white and blue cheesecake salad is the PERFECT dish for patriotic holidays like Memorial Day and 4th of July.

Fruit is such a great addition to spring and summer BBQ's. I am a BIG fan of making red, white and blue foods to go along with holidays! I used to make Patriotic Dipped Ice Cream Sandwiches…but now I will make this healthier dessert!

This Weight Watchers Red, White and Blue Cheesecake Salad is a cool, refreshing treat on a hot day….I will be sitting around fanning myself with an adorable DIY patriotic fans…and eating some guilt-free dessert, LOL!

How to Make Weight Watchers Red, White and Blue Cheesecake Salad

Get a medium bowl and add the softened cream cheese. Use a hand mixer or a stand mixer (my favorite, LOL) and whip the cream cheese until it is silky smooth. 🙂  No worries if it starts to bind up in the beaters….just keep mixing and it will loosen up eventually.

Once the cream cheese is smooth then add the dry pudding mix and beat it until these are well combined.

Now it is time to add in the creamer. Turn the mixer to low and add the creamer SLOWLY. I like to do about a tablespoon at a time and mix it well…till the mixture is smooth before adding another tablespoon. It is a pain to do it so slowly, but it will result in a smoother, prettier mixture!  Keep at it until you have added all of the creamer and the mixture is whipped smooth.

Stick this mixture into the refrigerator for now.

Now grab your fruit and peel and slice the bananas into a bowl. Pour the lemon juice over the bananas and stir them around so they are nicely coated. Pour any extra lemon juice out of the bowl.

Slice the strawberries or cut them into small chunks…your preference.

Add the strawberries and blueberries and stir the fruit around.

Grab the cheesecake mixture and fold it gently into the fruit.

Keep this delicious salad refrigerated until ready to serve.

Decorating is So Fun!

I really enjoy putting out a few patriotic themed decor items for Memorial Day and then leaving them up until after July 4th.

Antique Farmhouse has a delightful Americana Decor section…with the cutest stuff!  What I love is that these are items I haven't seen anywhere else!! A little hint…their stuff SELLS out so if you see something you want…grab it or it may be gone!

Low Points per Cup

This recipe can vary a little bit on size depending on the size of your fruit!!  Mine came out to about 8 cups worth of yummy.  I thought about making the serving size 1/2 cup and you definitely can—that will take the points down to only 2 points per 1/2 cup.  Knowing that 1/2 cup probably won't be enough for me I made the serving size 1 cup for 4 points for all 3 myWW plans–blue, green and purple.

This made about 8 cups for me. Be sure to figure the recipe based on how much you get because fruit does vary in size a lot. If you do 1 cup servings then it is 4 points per serving on all 3 myWW Plans--green, blue and purple. You could also do 1/2 cup servings for 2 points.
